Are you guys like? Love to wake up in the morning and make some really nice breakfast?
Sometimes i am even planning what to eat for breakfast right before i fall asleep in my bed. Normally i try to wake up early in the weeks and start my day with a cup of tea or coffee, it depends what i feel like. Sometimes i like to enjoy my breakfast first and then have a coffee after that.
When it comes to breakfast i have 3 different standard breakfast that i normally eat. I chose which ever my body feel like having.
First one is a simple standard breakfast with a sandwich, a boiled egg and a smoothie. And what do i have on my sandwich? It depends what i feel like. Sometimes i have avocado, sometimes i put the egg on the sandwich with caviar and sometimes i just have cheese.
Second one is oatmeal. I love my oatmeal and i really like how you can make it different from day to day. one of my favorites is to mix the oats with cocos, bananas and blueberries before heating it up with water. Than i add some seeds and nuts together with honey on top of it and pour some almond milk on it. This is one of my favorite breakfast!
Third one is Greek or Turkish yogurt with berries, fruits, nuts, seeds, honey and peanut-butter on top. Simple and yummy!
Sometimes i eat other stuff like a nice omelette mixed with veggies and Dijon mustard.
What is your favorite breakfast?
Since i arrived in Malta one week ago i have been eating out a lot, like you do when travelling. Even if this is not really like travelling for me, it is more like visiting my other home.
But i have had cravings for sushi every single day! Normally i vary my food a lot but i this time i think i have been eating sushi almost every day. Eating sushi out, ordering sushi to eat in bed.. you name it. But i tell you one thing, there is a lot of good sushi places here on the island. i will write you guys a guide to great sushi in Malta later 😉
Not only do we have a food market next to our hotel, we also have a underground food mall. I love walking around at those places to discover new food to try out. Yesterday i ended up having a Traditional dish from Hue in Vietnam, a noodle soup with snake-head fish. It was really good.
Once again i have been eating a delicious meal in Vietnam. I think Vietnamese cousin must be one of my absolute favorite food in the world. So many great options! but of course i have my favorites. A big one is the Vietnamese fresh spring rolls. Always making them myself when i am home in Sweden.
Then one dish that i dont remember the name of right now, but it is a soup with a lot of fresh spices and lettuce that i like to have together with some vegetarian fried spring rolls.
But than i have one of my new favorites, the Banh Xeo (Vietnamese pancake). This is sooo good, and i had the best one so far here today in Da Nang at Madame Hanh. I very much recommend to try them out there.
Okey, i am ready to tell you guys about one of my absolute favorite dishes i have been eaten since i went to Asia. It is called Popiah and it is delicious! I first ate it in a hawker center in Singapore, China Town. The second time i ate them was in Kuala Lumpur where they actually had the best ones. Several times i went to a place called Sisters Cripsy Popiah, which is a food chain they have in Malaysia. Really recommend to try those if you ever get the chance.
So what is Popiah?
I would describe them as thin crispy pancake/crepes filled with vegetable and a delicious sauce. At my favorite place “Sisters crispy popiah” they also have a crunchy filling that is great. I am not sure what the crunchy stuff is, but it taste a bit of peanuts.
If you want meat like beef or chicken in your popiah you can order that as well.
I am not really that hungover today, but we had a few beers yesterday and i slept very little. So i felt for a nice and greasy breakfast/lunch, so i made this awesome sandwich.
It is bread with a little bit of mustard, onion, tomatoes, red beet falafels and cheese that i put in the oven.
After that i added salsa and garlic dressing and served it together with red cabbage salad, avocado and sour cream.
It came out god damn yummy!
Today i slept till 10.00 am and around 12.00 i got some friends coming over. Before they arrived i prepared some lunch for them. I had no idea what to cook so i just checked what i have at home and came up with this delicious soup. I will share the recipe with you guys but since i never measure anything i can not really write EXACTLY how i made it. But almost 🙂
What i used when i cooked the soup:
2 sweet potatoes
1 can of coconut milk
A dash of cream
2,5 vegetable broths
2 small chillies
1 yellow onion
half garlic (ca 5 garlic cloves)
Salt and pepper
A little bit of Habanero chilli mix from Fynbos (i love this one but it is VERY spicy, so use it only of you like really spicy food)
- Cut the sweet potatoes in smaller pieces and boil them with water that just cover them in the pot. Add the broth + salt & pepper to the water while it is boiling
- While the potatoes is boiling, cut the garlic and the onion in to smaller pieces and fry it in butter in a frying pan for a little while, than add it to the boiling water
- When the potatoes are soft, add the coconut milk and a little bit of cream and let it boil together
- When it is boiling, turn of the heat for a little while and than add everything to a blender. Mix it all together and pour it back to the pot and heat it up to boil again. Add some more spices after taste. DONE!
When you been sick for a long time it is important to keep a good diet.
When it comes to food i just love seafood! All the shellfish, crab, shrimps, clams, oysters, you name it. It sucks, because i feel a bit bad sometimes when i eat it, after all it is still animals, but i just love it too much.
I already stopped eating meat a pretty long time ago, and bird, and i do not miss it at all. I can probably live the rest of my life without meat. But seafood… not so sure.
